New Years Eve Cocktail & Mocktail

New Years Eve is almost here! Personally I’m so happy to have a night to sit back reflect and celebrate a great 2018 year!

Since ringing in 2016 all of our New Years have ended like this by around 10 PM.

This year I’m hoping to keep the festivities going a little longer.

Marcelo and I are planning to cook dinner with this awesome device I got him for Christmas.

I’m planning to make the cocktails. Champagne to toast at midnight and non-alcoholic so we don’t get too sleepy before midnight.

Here’s our recipient for New Years Even Champagne Cocktail & Mocktail.

Raspberry Royale

Ingredients

  • 6 teaspoons raspberry liqueur

  • 1⁄2 pint fresh raspberries

  • 1 bottle of good Champagne, chilled

Instructions

  1. Pour 1 teaspoon of raspberry liqueur into each champagne glass

  2. Add 2 or 3 raspberries

  3. When guests arrive, pop the cork and fill each glass with Champagne

  4. Serve immediately.

I love Moscow Mules. The copper cup alone is so festive. Here’s a non-alcoholic version to help keep your wide awake until ringing in the New Year.

Non-Alcoholic Moscow Mule

Ingredients

  • 1 lime (1-2 tablespoons juice, fresh is best)

  • 1 TBS simple syrup

  • 1/4 cup club soda

  • 3-4 mint leaves (torn, optional)

  • 3/4 cup Ginger Beer

  • crushed ice

Instructions

  1. In the bottom of cup, pour juice from lime, simple syrup and club soda 

  2. Add mint leaves if desired

  3. Fill the cup about half way with ice

  4. The pour about 3/4 a cup of ginger beer over the ice

  5. Garnish with mint leaves and a lime wedge if desired, and serve
