Glow Pops For Fussy Eaters: Apply Pie
This summer Leo was simultaneously teething while going through a fussy eating stage. The weather was hot so giving him yummy nutritious Glow Pops was perfect! They have all kinds of recipes Roasted Carrot, Strawberry & Spinach all sweet and satisfying.
I was disappointed when the weather started getting chilly. How would I sneak in the good foods?
Then I came across this genius recipe in the book for Apple Pie Popsicle. This has Fall written all over it! It tastes just like eating an apple pie!
- 2 tbs coconut oil
- 5 or 6 apples unpeeled and cut into 1 in. cubes (about 6 cups)
- 1/2 cup of water
- 1/2 cup maple syrup
- 2 tsp ground cinnamon
- 1/2 tsp ground ginger
- generous pinch of salt
- In a medium pot heat the coconut oil over medium-high heat. Add the apples and cook, stirring occasionally, for 5 minutes. Reduce the heat to low and add the water, maple syrup, cinnamon, ginger and salt. Cover and cook for 10 minutes, until the apples are very soft, almost falling apart.
- Remove from the heat; let the mixture cool until warm to the touch before blending until smooth.
- Pour the mixture into pop molds and freeze for 1 hour, then insert sticks and freeze for 4 hours more, or until solid.
