Glow Pops For Fussy Eaters: Apply Pie

This summer Leo was simultaneously teething while going through a fussy eating stage. The weather was hot so giving him yummy nutritious Glow Pops was perfect! They have all kinds of recipes Roasted Carrot, Strawberry & Spinach all sweet and satisfying.

I was disappointed when the weather started getting chilly. How would I sneak in the good foods?

Then I came across this genius recipe in the book for Apple Pie Popsicle. This has Fall written all over it! It tastes just like eating an apple pie!

Ingredients

  • 2 tbs coconut oil
  • 5 or 6 apples unpeeled and cut into 1 in. cubes (about 6 cups)
  • 1/2 cup of water
  • 1/2 cup maple syrup
  • 2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • generous pinch of salt

Directions

  1. In a medium pot heat the coconut oil over medium-high heat. Add the apples and cook, stirring occasionally, for 5 minutes. Reduce the heat to low and add the water, maple syrup, cinnamon, ginger and salt. Cover and cook for 10 minutes, until the apples are very soft, almost falling apart.
  2. Remove from the heat; let the mixture cool until warm to the touch before blending until smooth.
  3. Pour the mixture into pop molds and freeze for 1 hour, then insert sticks and freeze for 4 hours more, or until solid.
