Baby Food Recipes By Jamie Oliver: Michela’s Smashed Avocado, Basil & Chicken (No Cook)
Leo's been going through a fussy eating phase the last two months. Some days he will eat anything I put in front of him. Others he'll only eat foods from a select list of items. All this makes it difficult to plan out meals ahead of time.
Sometimes by the end of the day I just give up on trying to figure out what he may want to eat and cut up an avocado. (The one food that Leo will always eat without fail)
I turn to Jamie Oliver's family recipe page whenever I'm stumped on mealtime. What did I come across?.... Michela’s Smashed Avocado, Basil & Chicken (No Cook). Could it be any more perfect?!
Avocado: Leo loves them
Basil: I can pick straight from the garden
Leftover Chicken: A constant in our fridge
No Cook: Yes Please!
Take a look at this simple and nutritious recipe below.
- ½ a ripe avocado
- 2 sprigs of fresh basil
- leftover cooked chicken
OPTIONAL: extra virgin olive oil
Peel, destone and roughly chop the avocado, then place in a bowl and mash. Pick and tear in the basil leaves. Shred the chicken into small pieces, then add to the bowl. Mix together, add a little oil to loosen (if using), then serve to your little one.
FOR YOUNGER BABIES:
Blitz to a purée or very finely chop, depending on the stage your little one is at (for more information on stages of complementary feeding.
