Glow Pops For Fussy Eaters: Roasted Carrot And Thyme
Leo's been a fussy eater lately. Everyone says it's a standard phase for kids to go through.
A few weeks ago I made chocolate strawberry and spinach popsicle for Leo. He loved them! I loved that he was eating his spinach.
This weekend we decided to try again and take our chances with Roasted Carrot & Thyme popsicles. Perfect for our little bunny!
Not only did Leo love them. We did too! It's official in our house carrots are the new dessert.
- 1 Cup Coarsely Chopped Carrots
- 1 Tsp Coconut Oil
- 1/8 Tsp Salt
- 1 Cup Coconut Milk
- 2 Tbsp Maple Syrup
- 1 Tsp Fresh Thyme Leaves
- Preheat oven to 400 F. Toss the carrots with the coconut oil and add salt. Arrange them i a single layer on a parchment paper-lined baking sheet. Transfer to the over an bake for 45 minutes or until the edges are brown. Remove and let cool for 15 to 20 minutes util cool to the touch
- Transfer the carrots to a blender and the milk and maple syrup. Blend until very smooth. Add the thyme and pulse until the pieces are small and well distributed but still visible.
- Pour the mixture into pop molds and freeze for 1 hour, then insert sticks and freeze for at least 4 hours more, or until solid.
