Healthy Snacking: Spring Berries Woth Whipped Ricotta Cheese

Passover started last night and for those of you who celebrate you know that it can make eating and dieting IMPOSSIBLE! So much food is off the menu and dessert is kind of restricted to chocolate covered matzo.
 
I don't usually adhere to the dietary restrictions. But we decided to this year as a test run for teaching Leo down the line. 
 
In looking for a healthy late night option that falls into the guidelines I found this great recipe for berries w whipped ricotta cheese.

Ingredients
  • 2 cups strawberries, freshly sliced
  • 1 cup fresh blueberries
  • 2 fl oz diet soda, sprite, or other diet lemon-lime soft drink, divided about (1/4 cup)
  • 1 Tbsp mint leaves, fresh, chopped
  • 1/2 cup fat-free ricotta cheese
  • 2 1/2 tsp lemon zest
  • 2 Tbsp fat free sour cream

Directions
  1. Toss strawberries, blueberries, 2 tablespoons of soda and mint together in a medium bowl; set aside for 10 minutes.
  2. Meanwhile, combine ricotta, remaining 2 tablespoons of soda and lemon zest in another bowl; whip with a hand-held mixer until light and fluffy. Stir in sour cream. Place about 3/4 cup of berry mixture in each of 4 small bowls and top each serving with 1/3 cup of cream.
